The Perfect Healthy Breakfast
Avocado toast has become a staple for good reason — it is nutritious, quick, satisfying, and endlessly customizable. This version takes it to the next level with a perfectly poached egg, a drizzle of good olive oil, and a sprinkle of everything bagel seasoning. Ready in 15 minutes.
Ingredients
- 2 slices thick sourdough or whole grain bread
- 1 ripe avocado
- 2 large eggs
- 1 tablespoon white wine vinegar
- Juice of ½ lemon
- Salt and black pepper to taste
- Red pepper flakes
- Everything bagel seasoning
- Extra virgin olive oil for drizzling
- Fresh microgreens or arugula (optional)
Instructions
- Toast the bread: Toast sourdough slices until golden and crispy.
- Make avocado spread: Scoop avocado into a bowl. Add lemon juice, salt, and pepper. Mash to your preferred texture — some like it chunky, some smooth.
- Poach the eggs: Fill a saucepan with 3 inches of water and bring to a gentle simmer. Add vinegar. Crack each egg into a small cup. Create a gentle swirl in the water and slide the egg in. Cook 3–4 minutes for a runny yolk. Remove with a slotted spoon and pat dry.
- Assemble: Spread avocado generously on toast. Top with poached egg. Season with salt, pepper, red pepper flakes, and everything bagel seasoning. Drizzle with olive oil.
- Serve immediately.
